Smoked Chicken and Sugar Snap Pea Salad with Mint
This is a really great recipe for summer days when the last thing you want to do is to turn on the oven or stove. Serves 4.
•2 (6-oz) smoked chicken breast halves, skin discarded and chicken cut crosswise into 1/4-inch thick slices
•½ lb sugar snap peas, trimmed and cut diagonally into thin slices
•1 English cucumber, halved lengthwise, seeded, and cut diagonally into thin slices
•3 scallions, cut diagonally into think slices
•¼ cup fresh mint, chopped
•1 tsp minced peeled fresh ginger
•1 ½ TBSP oilve oil
•1 ½ TBSP fresh lime juice
Toss together all ingredients and season with salt and pepper.
