Sesame Spinach and Beet Salad
- Toasted sesame seeds
- Peel beets and very thinly slice with a sharp thin knife or a mandolin. Cut beets slices into fine julienne strips and transfer to a bowl with spinach.
- Stir together vinegar, soy sauce, oil, and sugar in a small bowl, stirring until sugar is dissolved. Toss spinach and beets with vinaigrette.
