and Cabbage Salad
An amazingly colorful and tasty cabbage salad recipe. It’s very simple to throw together very quickly. Serves 2.
1/3 English cucumber, halved lengthwise and thinly sliced crosswise
1/4 small red cabbage, very thinly sliced
1/2 red onion, thinly sliced
1/2 cup rice vinegar (not seasoned)
1/3 cup sugar
1/4 cup water
2 tsp salt
Combine cucumber, cabbage, and onion in a bowl. Bring remaining ingredients to a boil in saucepan, stirring, and immediately pour over cucumber mixture. Toss and let stand at room temperature, stirring occasionally, 10 minutes. If you prefer to served cold, chill in freezer 15 minutes. Recipe may be doubled to serve 4.
