Green Goddess Hearts of Palm Dip

PREP: 15 minutes
YIELD: about 1 3/4 cups

• 1 ripe Hass avocado, peeled and sliced
• 1 small shallot, finely chopped
• 2 TBSP lemon juice
• 1/2 cup Hearts of Palm Dip
• 1 TBSP chopped fresh tarragon
• 1 TBSP chopped flat-leaf parsley
• 1 TBSP chopped fresh dill
• Salt and freshly ground black pepper, optional

In a food processor, pulse avocado, shallot, and lemon juice until smooth. Add Hearts of Palm Dip and pulse to combine. Add tarragon, parsley and dill and pulse to combine. Taste and season with salt and pepper, if desired. Transfer to a serving bowl. Garnish with additional herbs, if desired and serve.
