Stuffed Cherry Tomatoes
Easy and tasty cherry tomato recipe. Double it for great party appetizers!
6 cherry tomatoes
3 TBSP part skim ricotta cheese
2 TBSP reduced calorie mayonnaise
½ tsp dried whole basil
¼ tsp ground white pepper
1/8 tsp dried whole oregano
Fresh parsley leaves (optional)
Cut the top off each tomato, scoop out pulp. Combine cheese and next 4 ingredients. Spoon 1 teaspoon cheese mixture into each tomato. Garnish with parsley, if desired. Yield: 6 appetizers (about 11 calories each).
