Spicy Collard Greens
•1/4 lb. turkey bacon, halved crosswise
•1 large onion, chopped
•1 large fresh jalapeño chile, seeded if desired and chopped
•1/2 cup chicken broth
•3 TBSP cider vinegar
•1 TBSP dark brown sugar or to taste
•2 LB collard greens (preferably with small leaves), coarse stems and ribs discarded and leaves coarsely chopped
Cook turkey bacon in a deep heavy pot over moderate heat until crisp and transfer to paper towels. Cook onion and jalapeño in olive oil over moderate heat, stirring until softened. Add broth, vinegar, and sugar and simmer, stirring until sugar is dissolved, about 1 minute. Add collard greens and simmer, covered, stirring occasionally, until tender, about 15 minutes. Season with salt and pepper.
