Parmesan-Crusted Grouper


Grouper is a mild fish and this recipe may entice even those who don’t like fish to make it a favorite. This recipe is super easy and can be served with a minimum preparation and cooking time.

½ cup grated Parmesan cheese
½ cup balance butter, softened, not melted
2 TBSP low-fat mayonnaise
2 scallions, thinly sliced
2 large or 4 small (1-inch-thick) grouper fillets
1 lemon
Freshly ground black pepper

Preheat broiler to high. In a small bowl, combine Parmesan, butter, mayonnaise, and scallions. Set aside.

Place the grouper fillets on a lightly greased broiler pan. Squeeze the juice from 1 lemon over the fillets and sprinkle with black pepper.

Broil 6 inches from heat for 10 minutes. Remove from oven. Spread the tops of the fillets with cheese mixture.

Return to oven and broil for 2 minutes longer or until the topping is lightly browned and bubbly. Remove fillets to platter.

Yield: 4 servings
