Pan Roasted Salmon
with Ginger and Curry
If you’re in the mood for Asian-inspired meal, serve this fish with pickled cucumber and cabbage recipe. Serves 2.
2 tsp minced peeled fresh ginger
1 tsp curry powder
2 (6-ounce) pieces center-cut salmon fillet with skin, patted dry
1TBP olive oil
3 scallions, chopped
Stir together ginger and curry and season with salt and pepper. Pat spice mixture onto fresh sides of salmon. Heat oil in a large nonstick skillet over moderate heat until hot but not smoking, then cook salmon, skin sides down, covered, 5 minutes. Turn salmon over and cook, covered, just until cooked through, about 2 minutes more.
Add to scallions to salmon and cook 30 seconds. Recipe may be doubled to serve 4.
