Luscious Lean Salad

It's easy to turn a salad into a diet torpedo. It's just as easy, though, to make one that's delicious and low cal. Here's how: start with loads of veggies (as many as you want), add in one protein, and top with an indulgence. Drizzle on a light vinaigrette or a creamy dressing diluted with a bit of vinegar.



VEGGIES

Mixed greens, spinach, sugar snap peas, broccoli, cucumbers, peppers, cauliflower, onions, zucchini, green beans, and tomatoes.

PROTEIN

Three ounces of chicken, turkey, or fish, 3/4 cup chickpeas, cannelloni beans, or white beans.

INDULGENCE

One tablespoon diced avocado or bacon, chopped nuts, or finely shredded or crumbled cheese(no big chunks allowed!)
