Grilled Stuffed Chicken Breast

Preparation time: 20 minutes



•4 ounces of chicken breast fillet

•1/2 ounce fat free Swiss cheese, shredded

•1/2 clove garlic, mashed

•1 TBSP chopped parsley

•Salt and pepper to taste

Preheat gill (or broiler). Created a pocket by making a horizontal slice on the straight side of the chicken breast, being careful not to slice through the top, bottom, or curved side. Fill pocket with cheese and secure with flat toothpicks soaked in water for 10 minutes. Season with pepper and rub with garlic and parsley. Grilled chicken 5 to 6 minutes on a side, or until cheese melts. Season with salt.

Serve with:

•1/2 cup couscous, tossed with:

•1 tsp lemon juice

•1/2 tsp olive oil
