Farmer's Salad

Serves 4

•2 eggs
•1 can of sweet corn (approx. 10 oz.)
•5 1/4 oz. cherry tomatoes
•1 orange pepper
•1/2 cucumber
•1 red onion

•1/2 iceberg lettuce
•5 1/4 oz. turkey bacon slices

For the dressing:

•2 TBSP white wine vinegar
•Salt
•Black pepper
•1-2 tsp Dijon mustard
•1-2 tsp honey
•3 TBSP olive oil

Hard boil the eggs for 10-12 minutes. While the eggs are cooking, wash and dry the sweet corn. Wash and halve the cherry tomatoes. Remove the eggs, plunge into cold water, peel and cut into pieces. Halve, clean and wash the pepper. Wash and dry the cucumber. Peel and halve the onions.
